The ultimate winter cake (gluten free)

Before we start, let's have a quick vocabulary lesson in French pastry: what is the difference between a a fondant and a coulant?

In France, a fondant is a cake that melts in the mouth but isn't actually runny in the middle. It's just very moist and silky. A coulant, on the other hand, is completely runny in the middle.

The most common fondants and coulants are made with dark chocolate, but you can find many variations with other flavours: a chesnut fondant, a salted caramel coulant,...


Now that this is out of the way, let us introduce you to a classic of French baking: the chocolate and chesnut spread fondant. It's exactly the kind of cake French grandmothers would make their grandchildren on Wednesdays (the traditional day off from school for French children). Everybody love it,and for good reason. It's rich, it's dense, it's comforting... The ultimate winter cake!


For the chesnut spread, we use the one from Clément Faugier, that you can find in any supermarkets in France. For non French residents, you can also find it easily online (Amazon, if UK based Fortnum & Mason,...).

It is very sweet, which is why we don't add any more sugar to the cake. However, if you want to buy an unsweetened one or make your own, we recommend you add 70 g of caster sugar when whisking the eggs, little by little.

Chocolate and chesnut spread fondant


Serving 6-8 people:


200 g good quality cooking dark chocolate

500 g chestnut spread

3 eggs

50 g unsalted butter

A pinch of salt

A tbsp of cognac/brandy/port (optional)



Preheat the oven at 175°C (340 - 350 F) fan-forced.

Melt butter and chocolate (best to do this in a bain-marie, but microwave works fine too if you don't have any other option).

Mix chocolate with chesnut spread and cognac.

Using a hand mixer or stand mixer, whisk the eggs with the salt for about 5 minutes, until fluffy and white.

Butter and line a 20-22cm round baking pan with parchment paper and pour the batter in it.

Cook for 20-25 minutes. The cake should be cooked but still moist.

Leave to cool for 10 minutes then transfer on a wire rack.

When cool, sprinkle some icing sugar.

Enjoy with a mug of mulled wine!

  • It can be kept in the fridge for a couple of days

Un classique de la pâtisserie française et un vrai gâteau de grand-mère, nous vous présentons le fondant à la crème de marron et au chocolat ! Il est riche, dense, réconfortant... c'est le gâteau d'hiver par excellence.

Il est extrêmement simple à réaliser et ne nécessite pas beaucoup d'ingrédients.


Nous utilisons la crème de marrons Clément Faugier, que vous pouvez trouver dans la plupart des supermarchés. Elle est très sucrée, c'est pourquoi nous ne rajoutons pas de sucre dans le gâteau. Cependant, si vous achetez de la non sucrée ou si vous faîtes votre propre crème de marrons, nous vous recommandons d'ajouter environ 70 g de sucre au gâteau, au moment de battre les œufs, petit à petit.

Fondant au chocolat et à la crème de marron


Pour 6 à 8 personnes:


200 g de bon chocolat noir de cuisine (nous utilisons généralement le Noir Corsé de Nestlé, sauf si nous avons du Valrhona à porter de main !)

500 de crème de marron

3 œufs

50 g de beurre doux

Une pincée de sel

Une cuillère à soupe de cognac ou porto (facultatif)


Préchauffez le four à 175°C, chaleur tournante.

Faîtes fondre le chocolat et le beurre (de préférence au bain-marie).

Dans un bol, mélangez le chocolat et beurre fondus à la crème de marron, puis ajoutez le cognac.

A l'aide d'un batteur électrique ou d'un robot muni du fouet, fouettez les œufs et le sel pendant environ 5 minutes, jusqu'à ce qu'ils soient bien mousseux et aient blanchi.

Beurrez un moule rond de 20 ou 22cm de diamètre, puis tapissez-le de papier sulfurisé. Versez la pâte et faîtes cuire 20 à 25 minutes.

Le gâteau doit être cuit mais encore bien fondant.

Laissez refroidir une dizaine de minutes puis démoulez-le sur une grille.

Lorsqu'il a refroidi, saupoudrez de sucre glace.

Dégustez avec une bonne tasse de vin chaud !


Conseil:

  • Il se garde très bien deux jours au réfrigérateur
