we had some leftover purée from our pineapple cocktail, so we chose to make pancakes out of it!
it was more of an experiment, and we didn't really know if it was going to be any good. we ended up with delicious exotic pancakes, with pineapple, mint, lime and rum flavors (just kidding about the rum, you can't really taste it!).
those sunny pancakes really make a change from the usual simple ones!
for about 10 pancakes:
pineapple purée (the one you have left from this pineapple cocktail recipe)
100 g flour
1 tsp baking powder
1 tbsp brown sugar
1 egg
150 g (15 cl) milk
a pinch of salt
1 tsp butter
in a bowl, sift together flour, baking powder, sugar and salt.
make a well in the center, add the egg and pour milk. mix until smooth.
incorporate pineapple purée.
melt the butter in a frying pan.
cook until bubbles appear on the surface of the pancake, then flip and cook for about 20 seconds.
serve immediately.
piece of advice:
you can serve with some maple syrup, a salted caramel sauce or lime juice for something less sweet!
