cucumber, cream cheese and mint tart

you don't want/have time to cook? friends are unexpectedly coming over?

this tart is your savior! it has the best taste/time ratio: it's ready in 20 minutes (cooking time included), and everybody loves it.

no fancy ingredients are required, you'll just need a good quality puff pastry, cream cheese, some mint and a cucumber. and some feta cheese for decoration, but that's really optional!

puff pastries are really long to make, and we can find very good ones at the supermarket in france. so we always have one in the fridge, just in case! but of course if you have time to make your own, it will be even better!


for one tart:


1 puff pastry

1 cucumber

150 g cream cheese (we use philadelphia)

2 tbsp plain yoghurt

feta cheese (optional)

8-10 mint leaves, finely chopped

a pinch of pepper

a pinch of salt


preheat the oven to 180°C (356 F).

blind bake the puff pastry: place it on a baking sheet covered with parchment paper. prick the pastry all over with a fork. bake for about 15 minutes (until golden).

leave to cool completely.

in a bowl, mix together cream cheese and yoghurt until creamy and combined. add salt and pepper, and mint, finely chopped. mix until combined.

spread the mixture on the surface of the pastry.

peel the cucumber and trim ends. using a peeler, slice it lengthwise to create long thin ribbons.

place them on the tart.

crumble some feta cheese on top.

decorate with fresh mint leaves.


piece of advice:

  • we usually don't use the middle part of the cucumber, with all the seeds. so when slicing it, we stop before slicing the seeds. everyone has its own habits when it comes to peeling and slicing vegetables, so seeds or no seeds, just do what you always do!
